Hey!, My Name is Lucas Szaran.
I was born and raised in Asunción, Paraguay, and cooking has been part of my life for as long as I can remember. I started cooking around age 10, and by 14 I was already working professionally. From an early age, I learned that food isn’t just about flavor—it’s about taking care of people, creating moments, and building community.
Living throughout South America shaped the way I cook and the way I think about hospitality. Every place taught me something new—ingredients, techniques, and the kind of warmth that makes a meal feel meaningful. Those experiences gave me a style that’s rooted in culture but not limited by it: bold, intentional, and always focused on the guest.
After the pandemic, I moved to the United States with my Italian-American partner and chose Seattle as the place to build my next chapter. It was a big leap, but it pushed me to grow—refining my craft, strengthening my leadership, and sharpening my point of view as a chef.
Now I’m stepping into what’s next: building something of my own. I’m focused on creating a chef-led brand that feels elevated but welcoming—driven by culture, curiosity, and the belief that the best dining experiences are the ones that feel personal. My goal is simple: let every dish tell a story, and make people feel taken care of from the first bite to the last.
